*The "Mother of the vinegar" is a cloudy white film that grows on the surface of the vinegar. This mass of beneficial bacteria and yeast aids in the conversion of cider into vinegar. In conventional or distilled vinegar, the “Mother” is destroyed when the vinegar is heated and filtered. The health benefits of raw apple cider vinegar are due to the fact that the “Mother” is not killed by heat, and the beneficial bacteria are permitted to thrive.*
